Chocolate Souffles

It is officially the end of 2011 tonight and the beginning of a new year and a new hope. 2011 was not the best years of my life, I have seen better, but it sure brought some of the good things in life. For one, I started The Recipe Code, a blog which is a mirror to my passion. One of the few things that I really enjoy doing is cooking and through this blog I get to share my cooking expeditions. Just so that you know, I also some times use cooking as a therapy. Whenever I am down or low I head to the kitchen and get my self busy in cooking and as soon as I start whipping up something, all my batteries are recharged and I start feeling better.

My father tells me that sometimes I giggle like a kid and I believe that happens only when something that I baked or cooked comes out just perfect, exactly like the way I wanted it to be. One of those giggles happened  tonight when I made these chocolate souffles.

Man! was I excited to see them rise nicely and standing tall. I wanted a sweet start to the new year, promising myself that this year would definitely be better and sweeter than the last. And the start was as yummy as planned, though my tall, good looking soldiers could not stand upright for too long.

Thai Style Chicken & Vegetable Noodles

Ever since I have been to Thailand, I have become a big fan of Thai foods simply because it's spicy and I love spicy food! Also because it's very varied and a whole range of different flavors are mixed together.


This recipe requires using coconut milk, and although I am not a very big fan of raw coconut but every time I make this dish, the aroma of coconut cream mixed with other ingredients make me 10 times hungrier!

On a family gathering last weekend, I served chicken and vegetable fritters as appetizers and before I could take few appropriate pictures of them, every one had already started digging into those hot fritters and two minutes later... well the plate was as clean as nothing had been served in it!

Chicken Malai Boti - Creamy Grilled Chicken in Pakistani Manner

Though this recipe requires heavy cream but it I am sure these lovely pieces of grilled chicken are not at all high in calories.. Or at least I like to think that :D
For all TRC readers who do not belong to Pakistan, let me introduce you to this amazingly flavorful variation of grilled chicken that my family and I have enjoyed for years. Whenever we dine out in a BBQ restaurant, the first thing we order is always this Malai Boti. Malai, which means cream and Boti which means meat, is a very common delicacy here in Pakistan. Usually served with Naan, Raita (flavored yogurt) and salad, this dish is an absolute crowd pleaser.  Usually bar-b-qued,  these soft chicken pieces have a silky texture and a pleasant charcoal aroma.

Savory Croissants

Savory. Croissants. WITHOUT. Puff Pastry!

Yup, You heard me right! These croissants are savory and are NOT made with puff pastry! Like many people I too am a leeeeettle scared of puff pastry [ ok, a li'l more than that :( ] but yeah I get worried when a recipe I really like, calls for puff pastry. Some day I will conquer my fear and I'll make a perfect puff pastry of my own which will be brown and crispy and puff up magnificently upon baking. But for now I'll show you how to make croissants with a simple dough which would still be flaky and buttery. I promise!

Mini Chicken BBQ Quiche

Mini Quiches are the best savory finger food which are easy to prepare and serve without much mess. Having loads of chicken and cheese, quiche can be an instant hit in any family or gathering. If you are on a calorie control diet, you can easily substitute some of the ingredients without affecting the taste. They are also good for kids' lunch boxes and can be frozen if prepared ahead of time.  If you have access to ready made pie crust, congrats! half your job is already done. But wait, let me tell you that ready made pie crust cannot beat the goodness and flavor of  fresh home made crust.

Battered Red Snapper

I am sharing with you all a recipe of Battered Red Snapper which is my mother's specialty. This is a very simple recipe and makes excellent snack with in no time. The best thing about this recipe is that fish can be frozen after seasoning and only requires 10 minutes to prepare after defrosting. It can be served as a snack with potato chips or at dinner with a side of veges. 

Fillet o' Fish Sandwich

A succulent fish sandwich. White fish coated in a light batter and fried to perfection served with homemade tartar sauce on a toasted bun. Any firm and dense white fish of your choice, coated with a simple batter of garlic flour, breadcrumbs and egg and fried until golden.

The tartar sauce is simple homemade mixture of mayonnaise, cucumber, onion and jalapeno peppers.

Chocolate Cupcakes


Winters are just around the corner here in Pakistan and the best way to enjoy chilly evenings is to bake! Though we do not get very low temperatures here in Karachi, but still the Karachiites loves to enjoy whatever they get.

This evening I was craving something warm and chocolatey but also something light and quick so I decided to make cupcakes. These cupcakes will leave your kitchens warm and your house smelling beautiful.
