Pineapple Muffins




Winters have finally found there way into Karachi and although temperature has not fallen below 10 degrees, Karachiites are having good time enjoying the much awaited chilly breeze. 

Winters and baking has a strange connection. I think baking is much more fun on a cold day and the warmth of the oven in the kitchen makes one feel so cozy. Sunday began with a cloudy weather and cold breeze and as soon as I got out of bed I knew I had to bake something today and what could have been better than freshly baked muffins for the breakfast with entire family.

So I set up my work station and started making muffins.





Cream butter and sugar in a bowl. Add eggs and beat more.

Sift together flour and baking powder and beat with the butter mixture. Add vanilla essence and mix some more.

Line muffin pan with muffin cases and fill each case 2/3rd full. Stick a large chunk of pineapple in the middle of each case.


And bake in preheated oven at 190 degrees for 35 minutes or until the muffins start taking a brownish color.

Once they have cooled, prick few holes using a toothpick and drizzle pineapple juice on each muffin with the help of a spoon. 


In the end drizzle molten white chocolate if you wish to but that's completely optional.

As I am writing this post, I am enjoying a warmed muffin with peppermint tea and trust me it really does taste amazing!

Pineapple Muffin
Ingredients:

  1. Flour (1 cup)
  2. Egg (3)
  3. Sugar (3/4 cup)
  4. Butter (125 gms)
  5. Vanilla essence (1 tsp)
  6. Baking Powder (2tsp)
Method:
  • Sift together flour and baking powder. Keep aside.
  • Cream butter and sugar.
  • Add eggs and beat some more until sugar is well incorporated.
  • Add all dry ingredients and mix using a spatula or beater on low speed.
  • Add vanilla essence and mix evenly
  • Line a muffin tray with muffin cases and fill each case upto 2/3rd full.
  • Stick a large chunk of pineapple in the center of each case.
  • Bake in preheated oven at 190 degrees for 35 minutes or until a tooth pick inserted comes out clean.
  • Let them cool.
  • Prick the surface of each muffin with a tooth pick and drizzle pineapple juice evenly with the help of a spoon.
  • Drizzle molten white chocolate for garnish.

Note: This recipe makes 10 muffins.

  2. These look delicious. I love pineapple. Winter is my least fave season, it's wicked cold here in Ontario. I prefer summer.

  3. Pineapple muffins! That sounds delicious. I made pineapple cake which I will share next week (and remember, I am not a baker so this is rare! lol). I should try this muffin next time! Kids love pineapples so it's perfect!
