I am a big fan of garlic and chicken, and what ever I try to make, some how these two ingredients make their way into my recipes.. Though, many times I have made sure that the chicken in my freezer has had it's feet removed and that the garlic in the pantry is sound asleep but they still manage to creep in.. I have no idea how!
Same thing happened when I started making a Monkey Bread (which I also tried to make earlier but it turned into this). The chicken and garlic quietly found their way into my bread and then came into being the Chunky Monkey Bread.
This is a savory version of the monkey bread filled with chunks of chicken and cheese, hence the name Chunky Monkey Bread ;)
The ingredients and procedure are quiet simple. So, to start with, for the dough you will need:
Add an egg, butter, oil and milk
Knead the dough for 5-8 minutes until it gets stretchy and smooth. Cover and keep in a warm place for 2 hours or until doubles in size.
When the dough has risen, punch it down, knead again for 2 more minutes and roll flat. Using a knife, divide the dough into 48 equal parts and assemble a chunk of chicken and cheese on each square. I used K&N's Chicken Chunks which are basically bite sized chicken pieces in BBQ or Tikka flavor. You can use any of your favorite flavors in chicken or use K&N's chunks if available in a store near you.
Roll each piece in the shape of a ball and line evenly in a greased bundt pan. Drizzle garlic butter generously and set another layer until all balls are evenly placed.
Allow a second rise for 30 minutes and then bake in preheated oven for 45 minutes at 190 C or until the bread takes a golden color. Take out of oven and let cool for 30 minutes before digging in!
Chunky Monkey Bread
Ingredients:
- All purpose flour (4 cups)
- Yeast (2 tsp)
- Salt (2 tsp)
- Sugar (1 tsp)
- Baking powder (1 tbsp)
- Powdered milk (2 tbsp)
- Egg (1)
- Butter (melted 1 tbsp)
- Oil (4 tbsp)
- Milk (warm 1/4 cup)
- Chicken Chunks (48 bite sized pieces)
- Mozzarella Cheese (48 bite sized pieces)
Method
- Sieve flour and mix together all dry ingredients.
- Add egg, butter, oil and milk.
- Knead for 5-8 minutes until the dough gets stretchy and smooth
- Keep covered in a greased bowl at a warm place and let it ferment for 2 hours.
- When the dough rises to twice its size, punch it down and roll it on a flat surface.
- Using a knife divide in 48 equal pieces and fill each piece with a chicken and a cheese cube each.
- Roll each ball separately and line in a greased bundt pan evenly.
- Bake in a preheated oven at 190 C for 45 minutes or until the bread takes a golden color
- Enjoy!
This is most unique bread that I've ever seen! It's like a pudding shape but you can tear off each bread to eat it right? Really cute idea. :-)
